El objetivo principal al inmovilizar una enzima es utilizarla en un gran numero de ocasiones lo cual trae como consecuencia una reduccion en los costos de produccion. En este trabajo se inmovilizo la invertasa de la levadura osmotolerante Candida guilliermondii MpIIIa para la produccion de jarabes invertidos a partir de sacarosa. La invertasa inmovilizada se utilizo 550 veces perdiendo solo el 50% de su actividad original. Este resultado sumado con la gran estabilidad a pH y temperatura la hacen atractiva para su empleo a nivel industrial.
